Easy Peasy Dinner ! Shrimp Fry w/ Veg Fried Rice

My children enjoy Chinese food, and so I whipped up this dinner last night which was a hit with the kids. Chopping the vegetables super fine for the Vegetable Fried Rice and keeping the meat out of the rice worked well for my kids.

Vegetable Fried Rice:
4 Cups Cooked Long Grain White Rice
1 Cup finely chopped Vegetables (I combined Carrots/Beans/Asparagus/White Onions)
1 tbsp soy sauce
1 tsp white vinegar
3/4 tsp salt or as per taste
1/2 tsp black pepper or as per taste.
1 tbsp oil

Add the salt ,pepper, vinegar, soy sauce to rice and mix in a bowl.
Heat Oil and saute the Chopped Vegetables on medium-low until the vegetables start turning soft. Add rice
to this mixture and let the rice heat through. Garnish w/ Cilantro /Green Onions finely Chopped..

Shrimp Fry:
My daughters call this shrimp Fry :)

1 lb Shrimp (I used the PRecleaned and precooked version)
1 tsp ginger finely chopped
1 tsp garlic finely chopped
1 tbsp soy sauce
1 tsp ketchup
1/2 tsp white vinegar

1/2 cup finely chopped onions
2 tbsp oil
1/8th cup water mixed with 3/4 tsp cornstarch.
Salt to taste

Marinate the Shrimp for 20 minutes with the ginger , garlic, soy sauce, ketchup, vinegar
Heat oil, saute the onions until soft.
Add the shrimp w/ marinade and let it look for 5-6 minutes until shrimp is cooked well.
add the salt and cornstarch mixture and cook on medium flame until a thick gravy forms....
Garnish with Chopped Cilantro/Green Onions.
Serve!!
